Rinse the chicken, fill the pot three-quarters full with water, place the chicken in the pot and add your other ingredients. Cook on heat until boiling, then reduce heat to a slow simmer. Cook covered, a minimum of 8 hours, and up to 48 hours as desired. Remove from the heat and allow the broth to cool, then pour through a strainer and set aside in the fridge to use in the soup.

Soup:

Cook your onions and carrots on medium heat in coconut oil until desired tenderness. Add the bone broth to the stock pot, place the onions and carrots in, and bring it to a boil. Using your slicer or zoodle maker, slice the zucchini. Once the carrots are tender, place the zoodles in and cook- time to cook will depend on the tenderness you want for the zucchini. Add the chopped chicken and garlic, and bring the entire mix back to a boil and cook for an additional 10-15 minutes and then serve.
